Mind Altering Stuff!

Let me present to you perhaps the most nutritious bread you will ever eat! Over the years bread has received a lot of bad press but not all plants were created equal! I have packed this loaf with as many superfood ingredients that can possibly work in a savoury bread. We are always being advised to eat more dark green leafy vegetables due to their antioxidant, fibre, vitamin and mineral content. Well believe it or not, this loaf actually contains spirulina, spinach, parsley, chorella & kelp! The matcha green tea is in there because it contains up to 137 times more antioxidants than normal green tea. The moringa leaf contains up to 25 multi-vitamins and proteins, it’s an anti-inflammatory and is packed with antioxidants. Chia seeds add EVEN more protein and fibre to the recipe and more importantly provides a source of calcium, manganese, magnesium and phosphorus. Ashwagandha is often used medicinally for anxiety, arthritis, insomnia, tumours, tuberculosis, asthma, leukoderma, bronchitis, backache, fibromyalgia, menstrual problems and liver disease. Now I could go on to talk about the benefits of the remaining ingredients including salt (yes salt!) but that would risk turning this post into an essay and you falling asleep! So if you do want to know anything else about the ingredients or where to source them please ask.

Ingredients:
2 heaped dessertspoons coconut oil
2 cups warm water
1 level tablespoon active dried yeast
1 teaspoon sugar/stevia
2 teaspoons xanthan gum
2 teaspoons baking powder
Generous pinch of salt
2 teaspoons matcha tea
2 teaspoons greens complex powder
2 teaspoons moringa powder
2 teaspoons ashwagandha powder
2 teaspoons mixed herbs
½ cup chia seeds
1 cup soya bran
2 cups flour mix (potato, sorghum, tapioca, garbanzo and fava bean)

Method:

Whisk the yeast, warm water and sugar together, cover and leave in a warm place for 15 minutes, Combine together all of the dry ingredients in a large mixing bowl. Gently melt the coconut oil in a saucepan and use some of the oil to grease a loaf tin. Once the yeast mixture is ready combine it, along with the melted coconut oil, with the dry ingredients using a wooden spoon or firm mixing spoon. Spoon the mixture into the loaf tin and press it down firmly by placing a large piece of cling film over the top and smoothing down the mixture with your hands. Peal this off and place a clean piece of cling film over the top and leave to rise in a warm place for 20 minutes or so. Preheat the oven to 200 degrees and when at least 20 minutes has passed bake the loaf for 20 minutes or until firm and dry to touch and slightly browned. Allow to cool for few minutes before removing the loaf from the tin and placing it on a wire rack.
