Homemade Granola

A comforting snack or breakfast that will give you a gradual and subtle blood sugar rise and not cause sugar cravings hours later! Select your topping based on your nutrition and digestive needs. Your choice of topping should also be based on the time of day and activities of that day.

Ingredients:
3 cups fresh popped corn or pre-cooked quinoa
3 desert spoons sweet mixed spices
½ cup soya bran
2 ½ cups oat bran or whole oats
2 tablespoons raw honey
1 tablespoon coconut oil
Juice ½ grapefruit
Zest of 1 lemon

For the topping:
Organic yoghurt
Cacao powder
Mixed berries and seeds

Method:
Preheat the oven to 160 degrees C. If you are making the granola with pop corn then crush it up using your hands in a mixing bowl. Then add the remaining dry ingredients and stir in well. In a small saucepan gently heat the coconut oil and honey until the coconut oil has melted and steam starts to rise. Add this along with the lemon zest and grapefruit juice to the dry ingredients and combine the mixture with your hands. If it becomes too dry (this will depend on your selection of dry ingredients), add some warm water. Once the mixture is well combined, moist and sticky, spread it firmly on a thin, flat baking tray and flatten with the back of a large metal spoon. Bake for 40-45 minutes, removing half way through to break up the mixture into granola size chunks with the side of a metal spoon. Store in an airtight container, preferably a glass jar.
