Dairy & Gluten-free Pizza

For the base:

175g Brown rice, Soya and Potato Flour Mix
1 teaspoon yeast
3 tablespoons oat milk or 1 tablespoon low fat soy yogurt
~ 120ml hand-hot water

Method:

Sift the wholemeal flour & yeast into a bowl and make a well in the middle.
Pour in the hand hot water and milk/yogurt.
Mix into a dough with a wooden spoon and using your hands towards the final stages.
Dampen any dry bits you see on the dough, take the dough out of the bowl and continue kneading for ~ 3 minutes or until it becomes elastic in texture.
Place dough in a bowl, cover and leave in a warm place for ~ 1 hour.

Preheat the oven to gas mark 8 (230 deg C).

Tomato puree
Vegetables or salad
Fresh or dried herbs
Tofu or Soy Cheeses
Hard boiled duck egg slices
Sweet Corn
Olives
Anchovies
Avocado
Nuts and seeds
Spices
