Chocolate Bars and the Essex Leopards

This year I have become a sponsor of the Essex Leopards basketball team. I thought they’d have most of their nutrition covered but it turns out there is room for improvement! So, for their games I have started making some slow release, tasty carb-loaded snacks for them to eat as and when they need some more physical or mental energy. Basketball is a fast game so I know the team will be in need of some speedy nutrition! Enjoy these for yourself, either before or after your training or just as a healthy alternative to sugar-rich cakes.

Chocolate Raisin Oat Bars

Organic Ingredients:
1 cup oats
½ cup mixed seeds
2 cups gluten-free flour mix*
1 cup mixed raisins
1 teaspoon cinnamon
½ teaspoon xanthan gum
2 teaspoons baking powder
100g dark or milk chocolate
2 desert spoons cocoa powder
Milk as needed

*brown rice, gram & potato flour

Preheat the oven to 180°C and line a square baking tin with baking paper brushed with coconut oil. Sift the flour into a mixing bowl, add the remaining dry ingredients and mix well. Warm some milk in a jug and melt the chocolate gently in a sauce pan. Add the melted chocolate and as much milk as needed until the mixture becomes a thick moist batter. Use a large spoon to empty the mixture into the baking tin and use the back of a table spoon to gently press and spread flat. Bake in the oven for approximately 20 minutes or until firm to touch. Remove and leave for 10 minutes to cool, then place on a cooling rack. Once cool, put in an air-tight container and consume within 3 days. I personally like to refrigerate as this recipe is free from preservatives and made with organic ingredients.
